If I did one thing for you, it was when, years ago, you told me you were going to go to an expensive cookery school for a few weeks then open your own restaurant. I said you would be bankrupt and heartbroken within six months and not to do it and to go and work in the washup of the best restaurant you could find instead. Which, thank heavens, you did.
